In my Japanese book, both kanji mean stop. But what is the difference between them?
I read somewhere on google that 止 is used more toward things physically stopping.
Example 'A car stopped at the light'
But what is 留 used for?

Your information is essentially correct. 止、留、停、these characters share the same pronunciation in many verbs and have basically similar meanings. Some general distinctions are:
【止】: Carries a fundamental meaning of something in motion coming to a halt, or a continuing thing ceasing.
【留】: Carries a fundamental meaning of something becoming or being made to become fastened or affixed, or something attempting to move being kept stationary. This has overlap with English words like "remain," "hold" or "fasten." However, this more than the other characters is used interchangeably, occasionally incorrectly, with 「止」
【停】: Used more specifically and typically related to vehicles rather than people or other objects.
However you will find many cases -- e.g.,「鳥が枝にとまる」 -- where both 止 and 留 are entirely acceptable. (Both 止まる and 留まる sound natural there.)

"止まる" tomaru (intransitive) and "止める" tomeru (transitive) means "to stop."
"留まる" tomaru/todomaru and "留める" tomeru/todomeru are rather "to stay or to remain, not moving" or "to fix/hold."
標本を虫ピンで留める。
They fasten a specimen with a pin.

This is a question about Japanese, so has nothing to do with Chinese.
留 and 止 DO NOT mean the same thing, and they are NOT pronounced the same in Chinese! So how can they be pronounced the same in Japanese, since the Japanese borrowed from Chinese pronunciation, unless the pronunciations were chosen randomly.
留 means "to stay" and 止, one of the two ancient Chinese characters, which in modern Chinese, we use 停 and it means "to stop".
Japanese also sometimes add additional meanings to the Chinese characters which does not make sense!!!
You cannot examine a person to a lady. Each is specific. But a person, and a lady, supplement each and every different. In different phrases, one guy and one lady (in combination) is one unit. They are a complementary pair.
