I am doing my Spanish homework and I am not sure when to to use Qué o Cuál.
For example
Cuál es la comida mas conocida de Espana?
And
Qué son las rancheras?
Could anyone explain this to me please.

Cuál really translates as "which". Here you have a choice of possibilities and you reach your decision.
You could have other such questions: "Who/which is the pretties girl in the class?" "Who/which is your favourite footballer?", etc., etc. where again it would be "cuál".
Qué is asking for information concerning the identity of "Las Rancheras". Here there is no question of having to select your answer from a range of possibilities: you are being asked to explain in a factual way. In other words, you are being asked: "who" or "what".
