I find it's a great place to read and write, quiet, but not too quiet, no distractions, a sturdy table, and usually decent music.
4 times now at 2 café's I've spend 2 hours at a time doing a combination of reading and creative writing. For the writing I'm extremely productive, reading is pleasurable.
There's never a shortage of seating.
I'm worried that this behavior is odd. I don't want to get kicked out... I'd be too embarrassed to ever go back.
There is an option that I can use if I'm emotionally barred from the two cafes. There's a third..but no one uses it as a cafe. They have tables, but I can't imagine anyone using them. The seating area reminds me of a hospital that's been abandoned, you can see the marks on the wall where things used to be, and nothing has replaced them. Not just that, it's small, six seats or less, and in a fairly cramped space. It's mainly a bakery... actually that sounds quite bad...that's no longer an option...
Basically want reassurance that I'm doing the right thing, and there will be no consequences to my silent, unbothersome actions, but am willing to face any truths that may make me feel worse about the situation.

People do it all the time, so it's ok
I've gone in to cafe's and only ordered water. You're just fine if you order a single coffee and stay for hours. Trust me - they like having someone there who looks like they are enjoying themselves and utilizing the space provided appropriately. If you go there often, make friends with the staff their. It will make you feel more comfortable and the staff in those types of places like having a regular customer base.

When you purchase something(regardless of what it is!)from the Cafe you are then a customer,a customer that they appreciate since your money is paying THEIR salary(just look at it that way)You have the right to stay there as long as you want,just make sure you continue to purchase the one cofee like you're doing.My little sister was a barista at a family owned Cafe for two years and I have heard from her as well as the Cafe Manager that they appreciate their customers and do not take them for granted,since they are aware that there exists a lot of Cafe business competition,so they go out of their way to make customers come back to their cafe to aquire their business.
A lot of people do it. So they won't kick you out and your behavior is definitely NOT odd! enjoy your coffee, relax, and watch the world run by.
No way is it not - most people go to cafes just to have a coffee..
It is not inappropriate. You're just as much a customer as anyone else. Have fun and enjoy your coffee.
