無水奶油與酥油到底差在哪?

今年想做蛋黃酥,但我之前用酥油,今年去點心教室一趟,

但,老師跟我說"酥油"是合成的,用"無水奶油"比較好,

"酥油" 只需 75元,"無水奶油" 需 160元,

價差將近一半的原因在哪?

還有,哪種吃起來比較健康?(不想有含反式脂肪)
