I'm not vegetarian but there is one I do love and I made it up myself.
I don't really measure things but I guess.. haha.
Black bean burgers
1/2 cup flour
1 can black beans
2 slices bread (or some bread crumbs you can buy in a box)
Garlic powder or garlic salt (or both?)
Fajita mix
Salt and pepper to taste
Onion flakes
any other spices or peppers to add taste
Drain the black beans and then smush them up in a bowl. Crumble the 2 slices of bread or add the bread crumbs and mix it together. Add in your flavorings. I usually do 2 or 3 shakes of each flavor. The fajita mix you don't need much. Sometimes I add mrs. dash seasonings.
Stir all of this up. Gradually add in the flour a little bit at a time. The flour helps to hold it together.
Once you have it all nice and mixed, flour your hands and form the mush into patties. I usually make 4~6 patties out of those ingredients up there. It is ridiculously sticky!!!!
I cook mine on a griddle. Cook them on each side until they're heated through. I cook them on a temperature of 250.
Then put them on hamburger buns! I smother mine in ketchup and spicy mustard, add some pickles and lettuce! They're good!
I make veggie quessadillas a lot. Just saute some red sliced peppers with fajita seasoning then throw some cheese and olives or shrooms or avocado or whatever leftover veg I have between two tortillas and heat up in skillet with a little oil.
They have a lot of good recipes for vegetarian stuffed peppers or chili on allrecipes.com. Oh and Greek salads with chick peas, cucumber, feta cheese, red onion, tomato, lemon dressing and a few toasted pitas on the side!
