I have been scheduled for an interview this upcoming Monday, 12/11. Obviously I might not get the position but if I were to get the position I would not be able to start until after January 1st because I will be finishing my current job and then traveling out of state to see family for the holidays with plane tickets already booked. I’ve never been to a proper interview as my current job is coaching swim team and lifeguarding on the side, so I’m not sure how I should handle this. Any advice?

Just tell them, however if they need someone sooner you probably won't get the offer.
Just tell them when you will be available. January 1. No explanation is needed.
Saying "after Jan 1" is fine.
If they hire you and want you to start the following week or in 2 weeks and you can't, then you will not be considered.
Handle it with up front honesty and the truth. Tell them exactly what you just told us.
At this time of year, no one expects someone to start a week or two before the New Year, so saying "January 1 or January 2" is perfectly acceptable.
