Shouldn't the rational and scientifically minded person just apply the Principle of Parsimony/Occam's Razor and eliminate the extra unnecessary presumption? In this case «God»?
Regardless the fact there is a God or not. I'm talking about keeping a scientific mind in all we do, in spite of the intellectually honest mistakes we make once in a while.

The Universe, life, ect can be explained without the need for a God, so why therefore should it be altered to include a God.

Well, after you've come to (feel that you) know God, applying Occam's Razor would be like putting your spouse to scientific tests to see if s/he is really loving, faithful, etc. "Keeping a scientific mind in -all- we do," is not a good way to live.

Pascal 's theory was that in believing or not believing that there was less risk in believing (for the eternal soul that is) as if there is a god and you didn't believe, eternity was going to be a long time,and if there isn't a god and you did believe, you only wasted your sundays.

I think the God option should be in the back of the mind at least in case it turns out to be true... why throw out an option that has yet to be disproven?

My favorite approach is simply to just watch what's happening rather than trying to explain it all away. It doesn't matter really, I'll be dead soon enough anyway, I might as well just watch the stars shine for a while.
You have countries like Russia and North Korea, is that how you want to live? They have removed God from their countries and lowered the standard of living and the government gets to decide who lives and who dies, what you can buy and sell , who gets food and who starves, who gets medical care and who dies, no education because they don't want people to be able to question their policies. This is what happens when God is removed. I encourage you to move to one of these so you can be happy, since you have the right to be able to do that and the residents of these countries don't
