Not likely since you are assigned based on your skills and their needs. Like we were told when I was in basic that if the Army wanted you to have a spouse you would have been issued one.
Maybe or maybe not. All your military services have a joint spouse policy where they try to station married partners together or as close as possible to one another. The needs of the military come first however and so I suspect that Ft Polk was the closest available assignment to your current assignment. She can of course maybe work a swap with someone in her graduating class from AIT who has an assignment to Ft Benning. Another option is for her to try and work a swap with someone once she gets to Ft Polk if there is someone in the same MOS and about the same rank who is willing to make a swap. In that second case then both unit commanders have to also approve that swap which sometimes is not the case especially if there is much difference in rank.
Did you talk to the recruiter before she joined up about getting a joint spouse assignment at Benning? Did she fill out the paperwork at basic about it? Or at AIT? Chances are if you did not ask for joint spouse from the very start you are not going to get it. Your best shot would be to ask for a permissive change of station where you go to join her and pay for all moving expenses yourself. You might have to see if you can swing a trade with someone doing your same job. But bottom line, it may be too late and you are not going to get stationed together.

if you both didn't sign up for the married couples program
then its your fault she was not assigned to the same post
if you both go to your S1 and enroll into the program, they may change it, or they may not

Nope. She was given orders based on their needs
Possibly, but not likely.
Lolz
Give me a few minutes to call her commanding officer and ask.
My feeling is yes, but let me make sure.
