I believe it has to do with the amount of processing. Coffee is a veg, high fructose corn syrup comes from no.2 feed corn which is a vegetable, etc.

Beans are no longer vegetables. they are legumes that are closer to seeds. vegetables are plant life. nonetheless human beings combat over what's seen a veg and what isn't. A cocoa bean is a seed pod so this isn't any longer tech a veg.

The same is true of sugar, and we don't consider sugar a vegetable.
