The books of the Bible were all accepted as scripture from their very beginning. You have a lot of misconceptions in this question. The existence (and resurrection) of Jesus has more evidence backing it up than any other event in ancient history. A huge case can be made even by the accounts of his enemies.

Well, first: the gospels *do* appear to be written by either eye-witnesses or by authors who interviewed eye witnesses (as the author of Luke claims to have done). the tibetan new testament which is claimed to be an original source document from before the destruction of libraries and the corruptors also has testimony of jesus performing miracles.

There is such a thing as oral tradition. That is considered legitimate and legally binding in many cultures for historic and genealogical purposes.
As for "evidence", it all comes down to whether one has faith or not. Besides, one can still have alleged "evidence" of a lot of things, but it may still not be true.
Example? Pictures can be actual, or they can be Photoshopped. In the end you have to decide for yourself whether you believe what you see in that picture.
I would recommend not reading the bible. It's long and fictional. And you're correct, most people never did meet him, it was written about 100 years after jesus supposedly died.

The fish and loaves would have been eaten. Lazarus is long in his grave and decomposed (even assuming we could figure out where he is buried).
