Hello. First off, breathe. It's going to be okay. :)
A quinceanera party can be long. Like a wedding, it lasts several hours, depending on how long they rented the reception hall and how long the church ceremony lasts.
If you're not a big fan of dancing, relax, you won't be obligated to dance unless you're part of the Court of Honor (which is similar to a bridal party). You may be asked to dance, but you don't have to.
You can get her a birthday present if you like. Even a birthday card + a little bit of cash is nice (and optional), just like any birthday party.
Generally, there is someone there to host the party, usually an MC. They make announcements about the sequence of events and let you know when to eat.
For other parts of the ritual, you'll sit back and be part of the audience. (Again, unless you're part of the Court of Honor. You will know if you are, don't worry.)
It's okay if you don't speak Spanish. Just be polite, smile, and don't draw attention away from the quince girl.

I couldn't see the link you gave, but if you did okay at the Mexican wedding you'll be fine here, too. Again, just don't draw too much attention to yourself or your clothes and you'll be fine.
