yes, 沙 means sand. That name can be read Sunako, Shouko, Sachiko or Isako according to my names dictionary. But I don't think 沙子 is a very common name. As part of a 3-character name ( _沙子), however, it's common and read like "_sako."
幸子 can be read in many ways, most commonly Sachiko and Yukiko. 幸 means happiness or good fortune.
Sunako surely has a large number of meanings; most Japanese names do. I think the most common way to write Sunako is 砂子 (also "sand child" but with a different character for "sand").

Anyway, Sachiko is a very common name; Isako and Sunako aren't so common but not rare either. I think Sunako is the least common, but that's just based on my personal experience.
I'm afraid I don't have the knowledge to say for sure whether an uncommon name is weird/funny or merely uncommon. But in general, don't worry too much about whether a certain way to write a name is the most common; virtually all Japanese names have a slew of ways to write them and Japanese are used to encountering unexpected ones. There are certainly "weird/creative" readings out there, especially among young people, but I don't think 沙子 is anywhere near that level of weirdness.

In the event it's a fruit it includes seeds, otherwise it's a vegetable. And vegetables are usually grown in the ground while fruits are grown in trees.
