We're both living in the U.S. but I think maybe it's part of Indian culture to give gifts often? I want to make sure I'm being polite and reciprocating in a respectful way. For instance, she often brings me fresh mangoes, which I love, but won't let me pay her back for them. She has also given me several nice things for my new baby boy. I appreciate it very much, and also feel like I should give something in return, but not sure what would be an appropriate gift? Also, I would like to invite her family over to dinner, but not sure what to cook since they're vegetarian. I don't want to embarrass myself by attempting Indian food! But do want to cook something vegetarian that they would like. Any insights would be appreciated! :)

You obviously have Internet access, so look up a vegetarian dish that you feel comfortable making. Doesn't matter that it's not fancy, it's the thought that counts. It's a lovely idea, doesn't have to be dinner though. Indian people tend to have a sweet tooth, so tea with cakes (homemade if possible) would be a lovely idea too.
A thank you card ( that you made yourself? ) would also be greatly received.
Bake them some home made cookies or brownies
But make sure there is no eggs, since many upper caste Indians dont eat eggs ( and no meat, seafood, chicken, lard either )
