No, my friend. Unless Instagram of deliberately infected your computer with a keylogger there's absolutely NO WAY for them to see if you grab a screenshot ... unless someone is standing and looking over your shoulder OR you foolishly post the screenshot, and especially if you claim it as your work.
If a remote server (like a website) is able to detect what keys you press on your keyboard (in your computer) then there's surely malware lurking in your computer somewhere. No, insta should be able to see that you made a screenshot and notify you about it.
