They were both created capable of sinning. Only that they never realize what actually is 'sinning' until after they were told that they have sinned by eating the apple. Anyway it wasn't eating the apple the 'sin', but disobeying 'God'. But the 'consequences' of sinning, they only realized upon being cast down to earth and upon experiencing the 'sufferings' on earth.
But in Islam, we don't believe in the concept of 'Original sin', thus do not associate the 'Original sin' with human existence on earth. Islam teaches, the 'Sin' committed by Adam and Eve was just a 'cause' for fulfilling Gods plan to create mankind from a 'single pair' of a common parent, on earth for a specific 'purpose'.

What Adam and Eve didn't fully understand until after they ate was sin's consequences--that they would die, as the Lord had warned them. Their innocence was gone--and once your innocence is gone (on any level), it's gone. You can't get it back.
The Bible says that as soon as Adam and Eve sinned, "their eyes were opened." They had never known guilt or shame before, and they were also afraid of their Lord, who had created them. So their souls had indeed already died, as eventually their bodies would die, too.
But God still loved them! In His forgiving love, He promised them that one day a Savior would come, descended from Adam and Eve themselves, and restore them to all they had lost (Genesis 3:15). In time, the Lord sent Jesus, His very own Son, who died for Adam and Eve, and every other person since then...
