They dropped the mask when they made it a TV show, most likely because TV is a visual medium and they thought it wouldn't work well if you couldn't see his face in the kill room scenes.
Also, since no one gets out of those kill rooms alive, he doesn't really have to worry about the victims seeing his face. They're not going to be around long enough to tell anyone.
