If two people shared the exact same birth date, but lived in two different time zones, would the person who is in the later time zone be older?

You would check their birth time using Coordinated Universal Time (UTC)...
The one who was born earlier. Convert the date/time of each to a common time zone (such as UCT) and compare.
you would ave to know the hour minute and second of births the date or day name does not matter
