I'm doing my homework, and I'm not sure if I'm supposed to make the irregular past tense verbs agree with the gender/amount of people/etc
For example: One of the things is "Mes amies ____ leurs devoirs avant de sorti avec moi." I'm not sure if I should fill in "sont sorti" or "sont sorties" Please help!

In your case, 'sorti' is not correct, should be 'sortir' and is in the infinitive, not in the passé composé.
Your sentence is: My friends did their homework before going out with me.
The verb you have put at passé composé is 'faire' and you shouldn't worry about agreement there.
An agreement would be necessary if you had a pronoun replacing 'leurs devoirs' placed before the verb:
Mes amis les ont faits. (My friends did them.)
However, to answer your question, all verbs that conjugate with être make an agreement (gender, plural) between the subject and the past participle.
These verbs are:
