If you are on say 2 weeks holiday then when you get sentenced you only go to prison for 2 weeks per year you get sentenced to , its on a honour system , each year you must return to place of crime and do those 2 weeks until your time is up , its a pretty good deal really
It's called a 'Vacation Crime' and is treated as a misdemeanor. Most of the time the local police force decide to let those who have committed a 'Vacation Crime' off with a slap on the wrist, unless you have done something terrible like murder a bishop at a poker table.
The same as if you do it while not on vacation. The legal process takes its course.
I assume you are asking because your vacation is in a different jurisdiction from where you live. Then the law of where you did it applies. Do it in a foreign country and you might not be coming home for a while.
It depends on the severity of the crime. Thankfully, most offenses committed on vacation are low-level and simply result in a fine. A Panama City, Florida cop told me that he arrests over a hundred drunk, high, and rowdy people on Spring Break every year. He said that due to "limited jail space", most of these offenders are simply ordered to pay a fine, and spend only a few hours in jail. Because Florida has a "reciprocal agreement" with many other states, then if the person "fails to pay their fine" by the due date, then they risk having their driver's license revoked, and they could face additional fines. The person who is fined also has the right to "contest the fine" in a Panama City court, but most vacationers don't want to spend the time & money necessary to challenge the fine at a later date, so they simply pay it.

You’ll be detained and/or apprehended in that location, depending on the crime. If it’s a misdemeanor, you may be allowed to return for arraignment.
Then you go to holliday jail.
