Not only Christian theology. Most religions at least attempt to describe a spiritual realm. The descriptions of an afterlife began when the first human became cognizant that we dream while we sleep. It is presumed that early humans, in describing their dreams, thought they had traveled to a spiritual realm, as the surroundings they found themselves in were different.
This is a good question and shows that you think deeply about spiritual things, as do I. To answer you, though, I'd say yes, we should know more about it, as it would draw us closer to God and help us better understand Him. And we kinda sorta have a general idea of what it's like, but even still, the descriptions of it have been watered down so that our limited human minds can comprehend.
The book of Ezekiel is probably the most detailed, as it vividly describes the appearance of angels, God's heavenly chariot and His spiritual temple. The book of Revelation is also very illustrative on what the heavenly realm is like. We don't know any more about it than what our ancestors knew.
But the long and short of it is, we are physical, sentient beings who just weren't made to understand everything there is to know about the spirit realm. The true nature of heaven and beyond (if I can call it that) is so far above anything that our fleshly senses can perceive.
It makes me think of when Moses encountered God at the burning bush, and he had to shield his face because God's presence was that powerful. And just think: that was only a fraction or a fringe of God's essence, so you can imagine what it'd be like to see God in his entirety. Since we cannot fathom the magnificence of the realm he inhabits, as well as the spirit creatures that surround him, we are given fantastic word-pictures in the Bible. God was gracious enough to provide terminology that we are familiar with to help us grasp the nature of a spirit (i.e. eyes, ears, mouth, finger, etc. in describing beings themselves; wheels, chairs, thrones, scepters, etc. in describing objects that exist there).
Maybe in time, God will reveal more about what the spirit realm is like. In the meantime, we'll just have to go off of what we have right now.
