I know I need to use 'estas' alongside a noun, but have no idea which to use in my sentence.
I want to say "These are photos of..." and am stuck between the two. I am leaning towards 'éstas' because I am not referring immediately to the noun...? The "are" is throwing me off.
Accent or no accent?

If you write the noun, no accent. If it becomes a pronoun, with accent. Simple enough.
As user above says, according to the Royal Academy it MAY be written without accent, however the common usage is with accent
"estas" can be a demonstrative adjective ("Estas manzanas son ricas.") or a pronoun ("Estas son mis hermanas.") When used as a pronoun, this may be written with the accent, but it's not required unless necessary for clarity, e.g. to distinguish from the adjective (which never takes the accent)
According to the link below, some Spanish grammarians recommend NOT using the accent unless really necessary, but in actual use, it IS included by most writers.
What you are really saying here is,
"These (things) are photos of..."
'esta' is used with the noun, as far as I know, only with the noun. 'ésta' is used when you are not directly referring to the noun. So here, as you are not directly referring to the photos, I would write,
"Ãstas son fotos de..."
I agree with the above comments, I rarely see it written with an accent.
