I know so far, Eevee and all 8 of its evolutions like Vaporeon, Jolteon, Flareon, Espeon, Umbreon, Glaceon, Leafeon and Sylveon. well the best way to learn about pokemon is to play the game, other choices might be watching the series or reading the manga.
if u want to learn about them y dont u start playing the new pokemon game (Black/White 2) or wait for the new 1 which is Pokemon X/Y
if u have a 3DS then u can download a pokedex (or whatever they call it) and u will learn about them easier and faster, beside try this site it is really useful:-

Yes like the other viewer said, the best way to learn about Pokemon is to play the games.
If you have a DS, you don't have to start from the beginning!
You can start from these games and play in order:
#1. Pokemon: Heart Gold OR Soul Silver (Gen I and II Pokemon introduced)
#2. Pokemon: Emerald (Gen III)
#3. Pokemon: Platinum (Gen IV)
#4. Pokemon: Black 2 OR White 2 (Gen V)
Another way if you dont want to play the games is to just read the ENTIRE Pokedex, the National Pokedex. It covers ALL of the Pokemon now from Generations 1-5, all 649 Pokemon!

The Pokedex will be updated once Pokemon: X & Y is released later this year, so it's most likely another 150 Pokemon will be added!
I agree with the last two viewers, and that is to play the games.
I'd probably start at the beginning, which is Pokemon Red, Blue, or Yellow version (it doesn't matter which one you choose) then work your way up to Pokemon Black 2 or White 2 version. Here's the chronological order:

Pokemon Ruby/Sapphire
Pokemon FireRed/LeafGreen (remakes to R/B/Y)
