I know the differences between 話す and 言う.
But now I learn しゃべる, and it kinda ruins it for me xD
It's simple actually:
話す = to speak
言う = to say, to tell, to call
しゃべる ( 喋る ) = to chat, to chatter

Of course, you are right indeed in strict sense and definition of the words
Let me add some actual usages to it.
=============================================
話す, 言う and しゃべる(喋る)have almost the same meaning.
If anything, しゃべる is much used in colloquial coversation.
He talked.
I'm not sure what he says.
What If? You tell me!
I would say that you can forget to use
That is to say, without using しゃべる、you can speak Japanese.
