Well, I don't particularly like the name Gabriel, but for this name I think it works really well.
Since Evan is 2 syllables.. I don't think it works very well for it to be 2 syllable first and middle name.

I really like Evan Gabriel but I also like Evan Matthew..I choose Gabriel!
Evan Matthew sounds better, it just runs together. From going to a 1 syllable first name to a 3 syllable middle name like Gabriel, it sounds... weird.
My personal favourite has to be Evan Matthew.
