سلام يا طلاب In this phrase for example. Salaam ya tullab. Is this saying MY students? I don't understand it. I mean I figure MY students would be طلابي unless there are more ways to say it. This is the only thing I have come up with. An explanation on what "ya" means in Arabic would be great. If there are many meanings, what are the most commonly used?

يا is the English equivalent for "oh". سلام يا طلاب would be "Hello (literal translation is peace) students." كيف حالك يا ر س؟ means "How are you RS?"
And yes, you are correct, طلابي means my students
