I have never visited Mondejar, but I have visited some little villages around Madrid so I imagine it will be a very traditional rural place where people won't speak english. There's not much about the village online but there appears to be a decent hotel

Only 2200 people live there so it is small. It's probably nice to visit for a day or two...
I would suggest booking into the hotel and asking around when you get there if you want to stay longer.
Mondéjar is a wine growing region in Guadalajara in Castillo La Mancha. The wines in that region aren't the best in Spain but there are of a good quality for an everyday wine.
As for the transport system and accommodation I'm afraid I don't know, but there will be a bus service to Madrid because of it's close proximity.
