100% in English. You are teaching English after all and you should not use German in the classroom at all so your knowledge of German is not important at all.
This may seem like a lot of work but not really if you know the language well.
I would do the resume in German and then have an English one stapled to it. That's just me though.
Even though it's more work, if you did it in both languages it may really be appreciated..
