They were chorizo and cheddar stuffed mushrooms. Said to use by January 25th and I picked them up off the supermarket shelf on the 26th and realised today that they were purchased out of date. I still have the receipt. Should I seek legal advice or take them back?

take your receipt back with the food. it has the date and you should be able to get a refund. hell of a lot easier than a law suit.
The use by date is not a it turns to poison date.
It will be safe to eat. In some cases the quality may fall away but it will do so slowly, not over night.
The 'use by' date has no legal meaning. It is actually the date the manufacturer thinks it will START to taste less appetizing.
A SELL BY date often has a legal meaning.
The only legal advice you will get is you have no case.
I'm funny about food and expiration dates, funny meaning "more like paranoid of getting food poisoning." I always look at the dates and double check the date on my phone to make sure it's good for a few days... Lol (My Paranoia) Even if I didn't have a receipt, I'd bring them back and get a refund.
It really annoys me when I see expired food on the shelves - I always tell someone working there and hope they remove it - so someone else (in this case, you) doesn't buy it.
Just take them back.

I have never seen a store that didn't take back past dated items.
That date isn't 100%, of course, but I would NOT take any chances.
Take it back.
You can still eat it for about a week after the sell by date as long as it’s properly refrigerated.
Yeah, go the legal advice route.
