Unlimited, but I think Windows 7 jumplists can only display 999; exceeding that, the jumplist refuses to show up and you have to delete a .AUTOMATICDESTINATION file to start fresh. The path is

%APPDATA%\Microsoft\Windows\Recent\AutomaticDestinations

for Win7.

For just the "recent documents" menu items, go to "C:\Users\<yourusername>\Recent" for 7 or "C:\Documents and Settings\<yourusername>\Recent" for XP.
