I would trust someones facial expression before I would their words if there is a doubt. But you have to catch that split second before they monitor their thoughts.
I you have someone saying something positive to you but they are shaking their head no don't just take their word. They maybe being honest with both signals so check out what they are telling you.
You know if your husband says "Honey this is great," but his face is scrunched up in confusion or disgust and maybe his head is moving in the no direction the he really would have rather had pizza.

You mean, facial expressions? People have different ways of hiding their true feelings, so I don't think we can assume accuracy. We mainly guess.
